The Scoop

New Hwy. 20 venture designed for family fun tasty treats

LAUREL — A pair of local couples are hoping their new business here will tickle the tastebuds and bring smiles to faces of area residents.

Scott and Christy Taylor have teamed up with Justin and Jessica Eriksen to bring a new business to town. “The Scoop” will be a family-friendly destination that serves burgers and all sorts of ice cream and other tasty treats. It will be located in the former T&H building along Hwy. 20.

The partnership coincides with the relocation of one of the Taylor’s other businesses, T&H Meat Company & Fine Spirits.

“We feel moving T&H to the Claremont side of our downtown building is a great move for customers and our business,” Scott Taylor said. “We are able to have adequate staff and the fresh-cut meats we use at Knuckleheadz no longer will need to be hauled from one location to the next.”

He said the new partnership came together to fill a community need.

“The partnership with the Eriksens was formed out of a conversation amongst us as friends. We knew the community needed somewhere for teens to hang, an alcohol-free environment, and a place to enjoy soft-serve year round. We had the space, and so we’re taking it to the next level,” he said.

The Scoop will house state-of-theart equipment including a burger press that will create uniform burgers on the grill to insure uniformity and efficiency in cooking.

The new spot will also feature a soft serve machine with a flavor burst attachment. This means the flavor possibilities are nearly endless.

Not only will they serve meals, gelato, and ice cream for dine-in or carry-out, they will feature other specialty items unavailable anywhere else in town: Ice Cream cakes, Ice Cream Cookie Sandwiches, and Ice Cream Bars.

Justin Eriksen remarked, “We are hopeful that bringing The Scoop to Laurel will create jobs for teens, a safe spot for them to hang out after activities, and a place for families to gather. It also adds another reason to stay in town instead of traveling for goods and services elsewhere.”

Jessica Eriksen will serve as the manager of the business. She said, “I am excited for this opportunity. This is something our community has needed. We are grateful for the partnership with the Taylors and the adventure it has been so far.” She continued, “We want to decorate this place with school memorabilia to really emphasize our support of the school and community.” The building will feature free Wi-Fi and other forms of entertainment to encourage teens to gather there.

The couples are seeking qualified individuals to help bring happiness to the Laurel community by joining their team. If you or anyone you know is interested in being employed at The Scoop, contact one of the Taylors or Eriksens.
